I love to travel and I love to cook. Merging these two when on vacation is an experience I cherish. Each country I've been to presents a unique palette of flavors, techniques, and traditions that reflect its history and culture. One of the most immersive ways to explore this world's rich diversity is by taking cooking classes. These classes provide more than just a meal, they offer an insight into the heart of a place through its food. I know I could probably parse the recipes and techniques watching a YouTube video and I have done so for many dishes in past, but nothing beats learning it from a local, or a professional in some cases. There is just something to be said for making and eating a dish in the country that invented and/or perfected it.
To date, I've only done cooking classes in Europe but even then, those classes in Europe are as varied as the continent itself. Whether making baguettes under the guidance of a Parisian Boulanger, rolling pasta in Firenze with an Italian Nonna, or creating decadent pralines in Brussels in Vienna, each experience enriches one's understanding of the destination and the people who call it home. These classes may begin with a visit to a local market, where you learn to select fresh ingredients, a practice as vital as the cooking itself. This hands-on approach not only enhances your culinary skills but also connects you to the people and traditions of the area, making each dish a memory to savor ( and recreate!) long after you've returned home. Here is a handful of classes I've either taken, intend to take, or have read about and REALLY want to take. Bon Appetit!
Here are quick links to the various countries I've included:

Spain
Madrid - Paella Passion or Taste of Spain Tapas Workshops
The Paella Passion and Taste of Spain Tapas Workshops in Madrid both provide an experience that celebrates the rich flavors and communal spirit of Spanish cuisine. Hosted in the heart of Spain’s vibrant capital, these workshops are perfect for both cooking enthusiasts and casual food lovers looking to delve deeper into the country’s gastronomic traditions.
In the Paella Passion workshop, participants are introduced to the art of making an authentic paella, an archetypal Spanish dish that varies widely across regions. The class covers everything from selecting the right kind of rice and broth to mastering the layering of flavors and achieving the perfect socarrat—a crispy crust that forms at the bottom of the pan. Cooking is done in a festive, group setting, mirroring the communal nature of paella as a meal shared among family and friends.
When I was in Malaga, I got to see one of these communal paelleras ( traditional Paella pan) in use and was stunned by its size. It must have measured some 4 feet across and half a foot deep. The paella being made at that time was heavily influenced by the coastal resources and had various shellfish as the principle ingredients. It was amazing.
Alternatively, the Taste of Spain Tapas Workshop offers a broader exploration of Spanish tapas, providing a sampling of various small dishes that are staples in Spanish bars and homes. From patatas bravas and gambas al ajillo to chorizo in sidra (OMG I do love me a good spicy chorizo) and beyond, the students learn how to prepare a range of tapas using traditional ingredients and methods. The workshop emphasizes the social and interactive aspects of tapas culture, encouraging participants to engage with each other as they enjoy the variety of flavors.
Both workshops conclude with participants gathering to enjoy their culinary creations, in addition to several offerings by the chefs at hand, complemented by a (purportedly bottomless) selection of Spanish wines. Actually, I believe the wines are introduced throughout the experience so it might be a bit of a boozy affair from start to finish. These experiences not only teach the techniques of Spanish cooking but, as with the other courses, highlight the cultural importance of food (and wine and company) in Spain, making them a must do for anyone looking to experience Madrid’s local flavors.
Cost:
€99.00 for either course

The Apple Strudel Cooking Class including Lunch in Salzburg is a delightful experience set in a picturesque city renowned for its musical history and simply stunning Alpine scenery. This class offers a unique opportunity to master the art of making one of Austria's most iconic desserts: the apple strudel.

The hands-on portion of the class is thoroughly engaging, as participants learn to stretch the strudel dough to (hopefully) paper-thin consistency—a traditional technique that is key to creating the perfect strudel. Following this, attendees prepare the filling, mixing fresh, tart apples with sugar, cinnamon, and raisins, and other ingredients as desired. They will then roll out and set them in to bake to a golden perfection (again hopefully).
The experience finishes with a group meal where the students savor the warm, freshly baked strudel along with a typical Austrian lunch prepared while the class was going on. This allows everyone to enjoy the fruits of their labor and offers a chance to kick back and absorb the charming ambience of Salzburg.

Türkiye
Cooking Class at Exclusive Kings Valley
Cappadocia is a remarkable place in Türkiye. The history is as interesting as the geological features that surround you. The fairy chimneys and numerous caverns are an amazing place to explore and the people are more hospitable than anywhere I've ever been. I can't count the number of homes I was invited in to by the elderly village women in order to have a cup of çay, a.k.a. Turkish Tea. It is these same wonderful folk who host the cooking class in the magical Kelebek Cave hotel.
Someone will pick you up at your hotel, assuming you are already in Cappadocia of course, and bring you to the cave hotel for the class with a stop first at a local market to go shopping for ingredients. During the class you'll learn to make a few dishes: soups, mezes, a main, and a dessert along with Turkish coffee. In my class we made Yayla Çorbası (yogurt and rice soup), Dolma (stuffed grape leaves), Mantı (mini raviolis), and a chickpea dish. It will change of course depending on seasonal availability, but everything is pretty simple and delicious.
Of course at the end everyone will sit together and eat everything that was prepared in addition to a couple of other traditional dishes. The whole affair was about 6 hours and it was fantastic. We even had a few games of tavla (backgammon).
Cost:
Not currently listed on the website but with the exchange rate as it is now I'd expect it to equate to about $40 USD.
Bodrum Orak Island (Turkish Maldives) Boat Trip
Ok, this one is not a cooking class but I had to include it as it is an awesome excursion. It does involve food, I promise. Basically it is a day trip (called a mavi yolculuk or blue cruise) on a sailboat that takes you out to some lovely coves for swimming and hiking on the islands. They will prepare a lunch for you and believe me, food does not taste any better than when sitting on a sailboat deck after having taken a dip in the sea. We had Çoban Salatası (shepherd's salad), a tasty salad of tomatoes, cucumbers, with green peppers, spring onion, herbs, lemon and olive oil. There was freshly baked pide (pita bread) and a selection of cheese and cold cuts. Overall a very simple meal but perfect for the setting, especially if it is a hot day.
I can't say for certain if the link I posted is the exact tour we took but there are so many very similar tours that it is easy to find one. The stops on this links itinerary are the same so it may well be the same company I went with. I particularly remember rabbit bay as it was so warm and calm for swimming. We also were able to hike up into the hills on one other stop, at Orak island I believe, and found tonnes of wild kekik (oregano) growing there which, admittedly, we took a fair amount back with us. It was a fantastic day and one I intend to repeat when next I find myself in Bodrum.
Cost:
$33.75 USD per person. Ridiculously cheap IMHO for what you get.
